These baked almond and raspberry bars are found in cafés and bakeries, often iced with white or pink glacé sugar frosting. They are so popular they even have their own Instagram!
Process the flour, almond meal, sugar and vanilla seeds in a food processor to mix well. Add the butter and process until it resembles fine breadcrumbs. Gradually add the egg and pulse until the mixture comes together as a dough. Divide into 2 equal pieces. Shape each into a disc about 3 cm thick. Cover and chill for 30 minutes.
