  • 500 g new potatoes
  • 30 g salted butter


Cook the potatoes in a large pan of boiling salted water until tender. Drain and allow to cool. Cut small potatoes in half and large potatoes into 2.5 cm pieces. Heat the butter in a large frying pan, add the potatoes and cook for 10–15 minutes until crisp, golden and caramelised in places. Season.
