Shrubs or drinking vinegars are refreshing and non-alcoholic. They are perfect to enjoy on a summer evening with friends. Adjust the sugar depending on the ripeness of the fruit. If you’re using rhubarb, which is very tart, you will need to use the full quantity of sugar.

Ingredients

  • 200 g caster sugar
  • 2 lemons or oranges, zest cut into strips

Method

Put the sugar and citrus strips in a large bowl. Muddle a little, cover and leave at room temperature for 1 hour.

Remove the citrus from the sugar and discard. Depending on the flavour you are making, add the elderberry flowers or fruit, herbs or ginger, then muddle to release some of the juice. Cover and chill for 24 hours.
