Most regions of France have a favorite omelet, often a substantial affair including potato or bread croutons, with ham or cheese. I am partial to this lighter version from the Loire, with mushrooms, tomato, and plenty of fresh herbs that lead to its title santé, meaning “healthy.” When cooked like this as a flat cake, instead of being folded, it can be eaten hot or left to cool and cut into wedges — perfect for a picnic.
