If anything could claim to be the hamburger of France, it is the Croque Monsieur, the ham and cheese sandwich found in bistros and roadside cafés from Calais to Marseille. As with all simple recipes, a Croque Monsieur is only as good as the ingredients that go into it. If you use slices of Comté (a type of Gruyère) or creamy Morbier, you will be tasting the real France. For Croque Madame, a more substantial snack, perch an egg fried in butter on top of Monsieur’s sandwich.
