Spiced white wine with vinegar is an excellent marinade for rich fish such as mackerel and herring, yielding an appetizer popular along the north coast of France and into Belgium. Upping the ante, a tablespoon of juniper berries may be added to the wine for maquereaux marinés aux baies de genièvre. In Normandy, wine is often replaced with hard (alcoholic) cider.
