In the seventeenth and eighteenth centuries, the Breton port of Nantes, at the mouth of the Loire, was a center of French trade with Asia, and a taste for spices still lingers. Muscadet white wine, light and dry, comes from the same region, while Cognac, somewhat of a surprise with these scallops, is made well to the south. Shrimps Nantaise are also a favorite of mine. Allow about 2 pounds/
