Caillettes, giant meatballs made of ground pork, are a popular French charcuterie item. The pork is often mixed with ground liver and ingredients such as spinach, tomato, olives, or crumbled cooked chestnuts. Here, I am suggesting Swiss chard. Portion-sized patties are wrapped in caul fat, the veil-like stomach lining of a pig that melts during cooking and leaves an attractive lacy pattern. For an appetizer, add a salad of spicy greens; for a main course, add shell pasta or mashed potatoes.
