It’s a toss-up whether to include guinea hen as game, in line with its dark, musky meat, or as a domestic bird. A few guinea hens are often included in a farmyard flock, though they are noisy, independent birds that like to roost in trees instead of being penned in a coop. In northern France and Champagne, the dish is made with wild partridges. Small chickens or Rock Cornish hens can be cooked the same way.
