A mellow version of Beurre Blanc, this sauce is based on generous amounts of red wine. A Pinot Noir is memorable in Sauce Beurre Rouge, but a simple Gamay does fine, too. Serve the sauce with poached fish, eggs, or grilled chicken breast<
