The town of Sarlat in Périgord is renowned for its market selling truffles, foie gras, and confit of goose and duck. Potatoes fried in the confit fat are a local specialty, either flavored with truffles or, more economically, with garlic and herbs and called “poor man’s Pommes Sarladaise.” The potatoes are the traditional accompaniment to the confit itself, or will temptingly dress up your favorite steak. Look for goose fat in specialty-food stores.
