Tian is the Provençal name for a shallow baking dish, in various sizes and shapes, made in the local earthenware. But any ceramic baking dish of the same size or individual ceramic dishes will work well for this recipe. Unlike most gratins that call for a béchamel sauce or cream to bind the ingredients, this particular recipe uses eggs and rice.
