Fashions come and go, but every French child raised on Maman’s Oeufs à la Neige is hooked for life. The fluffy clouds of meringue “eggs” are set afloat on a sea of vanilla custard (crème anglaise), all drizzled with caramel — a dessert of dreams. To heighten the unreality, around Lyon the meringue is speckled all over with bright pink crushed pralines.
