Throughout southern France, sweet pastry fritters are sold for snacks, often at outdoor stands as street food. Each region has its own style: the oreillettes of Toulouse are layered like puff pastry so they curl up to resemble a little pig’s ear, the chichi-freggi of Marseille are simply spirals of deep-fried bread sprinkled with sugar, and these bugnes from Arles are folded like a bow of ribbon.
