Galettes Bretonnes are an agreeably light, crumbly butter cookie that is often marketed commercially. Just a few pâtissiers make them the old way, and here’s how.

Ingredients

  • 2 cups/250 g flour
  • cup/140 g

Method

Put the flour, sugar, baking powder, and salt in a bowl and mix them well with your hand. Make a well in the center and add the butter, egg, and 1 tablespoon milk. Mix these central ingredients with the fingertips of one hand until they are blended. Using both hands, work in the flour until large crumbs are formed; if the crumbs seem dry, add more milk.
