Galettes Bretonnes are an agreeably light, crumbly butter cookie that is often marketed commercially. Just a few pâtissiers make them the old way, and here’s how.
Put the flour, sugar, baking powder, and salt in a bowl and mix them well with your hand. Make a well in the center and add the butter, egg, and 1 tablespoon milk.
