Almonds grow far to the south, but tarts with pears baked in an almond filling are very much a Norman specialty. Often you will see them in a round tart such as this, with the pear halves fanned like the petals of a flower. Pâtisseries tend to favor a practical strip shape, with the pears packed crosswise head to tail. This allows single servings to be cut while the strip remains intact. The type of pear you use is less important than its being ripe and juicy.
