Put the chestnuts and milk in a saucepan. Scrape the seeds from the vanilla pod (bean) into the milk and drop in the empty pod too. Bring to the boil and cook over a low heat for 4-5 minutes. Remove the vanilla pod and leave to cool. Transfer to a bowl and blitz with a hand blender until smooth. Store in an airtight container in the fridge.
