The region of Auvergne in south-west France is famed for Pâté de Fruits and it dates back to the 17th century. Although the recipe has evolved it is still as it translates a fruit paste, traditionally cut into cubes and rolled in sugar. We use our Pâté de Fruits to complement our chocolate ganache in a selection of our couture chocolates – the sharpness of the Pâté de Fruits works wonderfully with our smooth ganache.
