These sweet orange bites are to be used as decoration for your chocolate bars. You can also dip these confit strips in tempered chocolate as with the Confit Grapefruit and enjoy on its own.
1 Score around the outside of the orange into quarters, then gently take off each quarter of the peel. Place the peel into a saucepan and fill with enough water to just cover the peel. Bring to the boil, then drain the peel and discard the water. Refresh the orange peel under cold water. Repeat this process twice more.
