Ingredients: 20 g (½ oz) dried cranberries; 200 g (7 oz) tempered fine white chocolate; fine milk chocolate with confit orange, crystallized pistachio & cocoa nibs; Fine white chocolate with almond batons, freeze-dried raspberries & black sesame seeds; fine dark chocolate with crystallized pistachio, toasted sesame & cranberries; 200 g (7 oz) tempered fine milk chocolate; 3 g (½ tsp) cocoa nibs; 3 g (½ tsp) freeze-dried raspberries; 12 g (½ oz) roasted almond batons; 16 g (½ oz) Crystallized Salted Pistachios; 15 g (½ oz) Confit Orange, cut into 3cm (1 inch) strips; 3 g (½ tsp) lightly toasted black sesame seeds; 200 g (7 oz) tempered fine dark (bittersweet) chocolate; 3 g (½ tsp) lightly toasted white sesame seeds

Method

1 Use a pencil to draw fifteen 4.5cm (1¾ inch) diameter circles on some silicone (baking) paper. With a teaspoon, fill in each circle with the tempered chocolate.

2 Place lolly sticks into the chocolate discs and make sure they are well covered so that they will be secure.
