This is a real classic and really worth the effort – you’ll have to be patient as marinating the cherries takes at least 3 months. The best time to eat them is when the fondant starts to break down, normally about I week after dipping. Bon appétit.

Ingredients

  • 300 g (10 oz) cherries with stalks on
  • 200 ml (7

Method

1 Wash and dry the cherries. Place them in a sterilized Kilner jar and fill with the kirsch. Place small silicone (baking) paper circles on top. Seal the jar and leave to marinate for 3 months.

2 Drain the kirsch from the cherries and reserve it for another use – the kirsc
