Ingredients: 150 g (5½ oz) liquid glucose; 50 g (1¾ oz) honey; 190 g (6½ oz/generous ¾ cup) caster (superfine) sugar; 50 g (1¾ oz/¼ cup) light soft brown sugar; 500 g (1 lb 2 oz) tempered dark chocolate, to coat; 500 g (1 lb 2 oz) tempered fine milk chocolate, to coat; 10 g (¼ oz) bicarbonate of soda (baking soda), sifted; 10 g (¼ oz) bicarbonate of soda (baking soda), sifted; 50 ml (1¾ fl oz/3 tbsp) water

This is one of the simplest and most fun confections to make at home. The name ‘cinder’ comes from the similarity in appearance to a burnt-out piece of coal.
