Although considered a French delicacy, the known origins of macaroons are greatly debated. Pierre Desfontaines of the French patisserie, Ladurée, is usually credited with creating the Parisian macaroon – adapted from a recipe for a biscuit-based gateaux, which he changed to small almond cakes sandwiched together with a range of different-flavoured ganache.
