This combination came from one of our many trips to visit the patisseries of Japan. We’re inspired by the new wave of innovative Japanese pâtissiers whose attention to detail in reproducing French classical patisserie is astonishing. They are leading a revolution as patisserie becomes an increasingly important part of the Japanese culture. The citrus flavours from the yuzu and orange work beautifully with the matcha crème brûlée and chocolate mousse.
