1 Put the milk and cream in a saucepan and bring to the boil.
2 Meanwhile, whisk the egg yolks and sugar together in a mixing bowl until light in colour, about 2-3 minutes. Add the cocoa powder and mix until smooth.
3 Pour half of the boiled milk and cream over the egg yolk mixture and whisk until fully mixed. Transfer the egg yolk mixture back to the milk and cream in the sauce
