In our dessert bar we serve this as a pre-dessert. It’s lovely and refreshing and great for cleansing the palate.

Ingredients

  • 500 ml (16 fl oz/2 cups) water
  • 100

Method

To make the poached brambles:

  1. Put the water and sugar in a saucepan. Scrape the seeds from the split vanilla pod (bean) into the saucepan and drop in the empty pod, too. Bring to the boil and then add the brambles. Take off the heat and leave to cool (the residual heat will cook the brambles).
