I predict matcha lattes will be the next big thing – they are very popular in Japan. We add white chocolate, which complements the matcha.
1 Make a beurre noisette. Put the butter in a saucepan and heat until the butter becomes golden and has a nutty aroma. Leave to cool.
2 Beat the egg whites and sugar together by hand in a mixing bowl and add the ground almonds, hazelnuts and matcha powder. Stir in the beurre noisette.
