Quinoa (pronounced KEEN-wah) is harvested from an ancient Andean grass related to the goosefoot plant. It’s considered a sacred grain by the Incas, and for good reason; it is an excellent source of protein and lysine. Quinoa flour has a strong, grassy flavor.
