The ancient Romans believed that lettuce was an aid to digestion, and this recipe, based on one that appears in Mira Sacerdoti’s book Italian Jewish Cooking, is actually a very old Roman dish. Don’t worry that the lettuces are braised on top of the stove without any liquid except olive oil. The finished dish will be moist enough because lettuce gives off quite a bit of liquid as it cooks.
