Inexpensive (depending on the oil you use)
- Use 4 tablespoons oil to 1 tablespoon vinegar. Salt and pepper. The vinegar can be replaced by lemon juice.
Vinaigrette with mustard
- Use 1 teaspoon strong Dijon mustard to 5 tablespoons oil and 1 tablespoon vinegar. Salt and pepper.
Vinaigrette with herbs
- Make either of the vinaigrettes given above and add chopped chervil, tarragon, chives, parsley, basil, shallots, onions or garlic.
