Method

An excellent recipe using ratatouille – Heat 5 tablespoons of ratatouille and line an oven-proof individual egg-dish with it. Make two hollows with the back of a spoon and slide a raw egg into each. Season with salt and pepper. Cook for 2 minutes over a brisk heat and for 2 minutes in the oven or under the grill. It is simply delicious.
