Method

  1. Take the oysters out of their shells and poach them for one minute at a very low temperature - the back of your finger should be able to tolerate the heat-in their own juice.
  2. Poach the four eggs in the traditional way. When they are cooked and cooled, put them on a clean cloth to drain. Remove the little filaments of egg
