  • 160 g (6 oz) filleted fish (John Dory, salmon, daurade, sea-bream, or bass)

Method

  1. With an extremely sharp and fine-bladed knife, cut the fillets of fish into slices so thin that they are almost transparent.
  2. Put them into the dish and sprinkle them with salt, pepper, chopped shallot, green peppercorns and oil. Allow to marinate for fifteen minutes.
