  • 1 whole shin of veal with the bone
  • 1 tablespoon olive oil

Method

  1. Peel the onion and slice it finely. Put it with all the other marinade ingredients into a deep dish. Let the shin of veal marinate in this mixture for twelve hours, turning it two or three times.
  2. Preheat the oven to 220°C/425°F/Mark 7.
  3. Drain
