- Trim the mushrooms, cutting off the earthy parts of the stalks. Wash them in plenty of water, rubbing them well between the palms of your hands.
- Drain the mushrooms, cut them in half and toss them quickly in the lemon juice to keep them white.
- Put the water in which you have dissolved the skimmed milk powder, into the saucepan, and bring to the boil.
