  • 420 g (15 oz) button mushrooms
  • 1.25 litres (2¼<

Method

  1. Trim the mushrooms, cutting off the earthy parts of the stalks. Wash them in plenty of water, rubbing them well between the palms of your hands.
  2. Drain the mushrooms, cut them in half and toss them quickly in the lemon juice to keep them white.
  3. Put the water in which you have dissolved the skimmed milk powder, into the saucepan, and bring to the boil.
