Method

  1. Peel the onions and slice them finely.
  2. Heat the olive oil in the heavy-based pan, add the onions, sugar substitute, salt and pepper.
  3. Cover the pan and allow the onions to brown slowly, stirring from time to time with a wooden spoon.
  4. After three-quarters of an hour, pour in the sherry vinegar and allow to cook gently for a further three-quart
