  • 1.5 kg ( lb) tomatoes
  • 2 finely-chopped shallots

Method

  1. Remove the stalks from the tomatoes.
  2. Bring a pan of water to the boil and drop the tomatoes in for fifteen seconds.
  3. Scoop them out and plunge them straight into very cold water, letting the cold tap run over them to stop them from cooking any further. The tomatoes are now easily peeled.
