Method
- Slice the leeks finely into rounds. Wash them in plenty of water and drain thoroughly.
- Put leeks and chopped mint in the saucepan and let them sweat gently ‘à sec’ to evaporate their water for five minutes, stirring from time to time.
- Pour in the chicken stock or white wine and season with salt and pepper.
- Simmer very gently for about thirty
