  • 600 g ( lb) of the white part of leeks
  • 2 tablespoons chopped <

Method

  1. Slice the leeks finely into rounds. Wash them in plenty of water and drain thoroughly.
  2. Put leeks and chopped mint in the saucepan and let them sweat gently ‘à sec’ to evaporate their water for five minutes, stirring from time to time.
  3. Pour in the chicken stock or white wine and season with salt and pepper.
  4. Simmer very gently for about thirty
