A Day Ahead Dissolve the sugar substitute in the water in the saucepan. Boil until it becomes syrupy. Then remove it from the heat.
Peel the limes with a potato-peeler, keeping the finely-peeled zest. Squeeze the limes, and put juice and zest into the syrup and leave to macerate overnight.
