Method

  1. Decapitate the apples and keep the tops.
  2. Scoop out the insides with a melon-baller, making small even balls. Macerate them, together with the tops which you have just cut oft’, in lemon juice and chill.
  3. Fill the apples with the diced fruit mixed with the little apple balls.
