Method

  1. Bring the water with the salt to a very slow simmer in the large wide saucepan.
  2. Whisk the egg whites in a bowl. Beat slowly at first to break down their resistance, then increasingly briskly as they start to thicken. Add the sugar substitute, ground to a powder if necessary. Bring the whites back to a good even stiff consistency by whisking with a steady stirri
