Method

Preparing the choux pastry

  1. Bring the water, skimmed milk powder, butter, sugar substitute and salt to the boil in the small heavy-based saucepan.
  2. Take it off the heat as it comes to the boil and stir in the flour with a wooden spatula. Put it back on the heat and cook, stirring for one minute to dry the mixture.
  3. Transfer to the warmed
