  • 2 tablespoons strong black coffee
  • sugar substitute equivalent to 4 tablespoons sugar

Method

  1. Dissolve the coffee powder and sugar substitute in the water in a small pan. Bring to the boil then take off the heat and allow to cool. Mix in the egg yolks.
  2. Lightly brush the insides of the soufflé dishes with the softened butter and Preheat the oven to 200°C/400°F/Mark 6
