Peel the garlic cloves and press them through a garlic press into a mortar. Add the cayenne pepper or Tabasco sauce and the bread paste. Stir with a fork or pestle and slowly add the oil. Season with salt and pepper, correct the seasoning, and pour the sauce into a bowl. Cover and keep in the refrigerator until ready to use.
