This delicious cold sauce is light and fresh. Truly superb with cold dishes.
Put half of the tomatoes in a blender with half of the onions and 1 garlic clove. Blend at high speed for 5 minutes and pour into a large bowl. Put the second batch in the blender—the remaining tomatoes, onion, and garlic clove, along with the basil, parsley, and oil. Blend for 5 minutes, then add it to the other batch in the bowl. Season with salt and pepper, stir well and refrigerate covered with plastic wrap (the oil will rise to the surface). The sauce will keep four or five days.
