Olive Oil and Red Wine Vinegar Sauce

This is a basic sauce made in a second and with all kinds of interesting additions possible. Don’t add herbs. Don’t keep it in the refrigerator. The ingredients are always at hand, so only prepare what you need for the moment.


  • a pinch of salt
  • 2 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • freshly ground black pepper

To this basic recipe you may add any of the following

  • 1 garlic clove, peeled and crushed
  • 1 teaspoon Dijon-type mustard (mix with vinegar first and stir well)
  • 2 tablespoons chives or parsley or basil or mint, finely minced with kitchen shears
  • 1 onion, grated


Dissolve salt in vinegar and beat in the oil very slowly. Add pepper and stir. Check to see if it is seasoned enough.
