This is a lovely dish in its own right, and nobody will ever guess it is based on leftovers.
In a large bowl, mix the mushrooms, garlic, shallots or scallions, half of the bread crumbs, parsley, salt, and pepper.
Preheat the oven to 375°. Oil a large baking dish and spread half of the vegetable mixture in it, spread the meat on it, and cover with the rest of the vegetables. Add the wine. Sprinkle with the rest of the bread crumbs and the olive oil and bake for 30 minutes.
