Baby Lima Beans Sautéed with Garlic

A delicious dish made with newly picked baby lima beans. Since fresh limas are hard to find here and the frozen ones are available all year round, this is a modified but still interesting version of the Niçois recipe.


  • 2 10-ounce boxes frozen lima beans*
  • 5 tablespoons oil (half olive, half peanut)
  • 6 garlic cloves, peeled and sliced in half
  • ½ cup bread crumbs (preferably homemade)
  • salt
  • freshly ground black pepper


Blanch the beans according to package instructions and drain them.

* Fresh string beans, cut into 1-inch pieces, may be substituted.

Heat the oil in a large frying pan and sauté the garlic until it is golden. Add the beans, bread crumbs, and salt and pepper. Stir and cook, stirring constantly, for 3 minutes, or until the beans are coated with oil and crumbs. The lima beans should remain slightly crisp. Serve at once in a warm bowl.
