Snow Peas Sautéed with Lean Salt Pork and Chives

One of the quickest and freshest vegetable dishes. Make sure the snow peas are fresh and crisp, and don't overcook them.


  • 2 pounds fresh snow peas
  • 3 tablespoons olive oil
  • cup diced lean salt pork
  • 2 garlic cloves, peeled and cut into 3 slices apiece
  • 4 tablespoons finely chopped chives
  • salt
  • freshly ground pepper


Break off the ends of the snow peas and pull off the strings. Wash and drain them.

Heat the olive oil in a heavy-bottomed pan and add the salt pork, garlic, and chives. Lower the flame and cook, tossing well, for 3 to 5 minutes. Add the snow peas, salt, and pepper and toss again. Cover and cook for 4 to 6 minutes, stirring occasionally. (The snow peas should retain their bright color and crispness.) Check the seasoning and serve.
